Having a treat with homemade biscuits is a treat to be enjoyed from time to time, and this simple recipe for preparing soft lemon biscuits allows us to do so. Soft, fragrant lemon biscuits are a classic. Remember to use organic lemons and grate only the yellow part of the lemon.

To prepare the soft lemon biscuits; take a bowl and whisk the sugar with the soft butter until you get a smooth airy compound. Incorporate the egg and salt and continue to assemble.

Add the grated lemon zest, filtered lemon juice, flour, starch and sifted yeast. Mix everything until the dough becomes homogeneous. Wrap it in cling film and place in the fridge for 1 hour.

After this resting time; take small pieces of dough and form balls the size of a walnut. Prepare two shallow dishes, one with sugar and the second one with icing sugar. Pass the balls first in the sugar and then into the icing sugar to cover them completely.

Place them well spaced (about 3-4 cm) on two trays on baking paper. Place the cookies in the refrigerator for at least 30 minutes. Preheat the oven to 180°C. Then bake them one baking tray at a time for about 12 to 15 minutes or until light brown. Towards the end of the cooking, the cracks will form on the surface. Take them out of the oven and let them on a grate before serving them.
