Ingredients

Adjust Servings:
250 ml Yoghurt
100 ml Milk
2 tbsp Honey
White pepper
500 g Smoked salmon
1/2 Red onion(s) cut thinly
1/2 Cucumber(s) cut thinly
1/2 a bunch Radishes cut thinly, in a bowl of cold water
1 Apple(s) cut thinly, in a bowl of acidified water
150 g Watercress
1/2 Lemon

Combine the yoghurt, milk, honey and pepper and stir well. Taste and season with salt and more pepper to your taste.

Slice the apple thinly and put them aside in a glass container. For the acidified water: combine 250 ml apple vinegar, 250 ml cold water, 150 g sugar, 1 tsp salt, 3 juniper berries and some allspice. Bring it to a boil. Lower the heat and let it simmer for 2 minutes untill the sugar has dissolved completely. Let it cool and pour over the apple slices.

Pull the salmon into flakes in another bowl. Gently add the onion, cucumber, leaked slices of radish, apple and watercress. Place the salad on a plate and drizzle some yoghurt sauce on top. Finish it off with some lemon juice and you’re ready to serve.

Leftover yoghurt sauce can be kept in the refrigerator for a week.
