This treat is super creamy. Enjoy with eyes closed and imagine yourself under the Italian sun.

Separate the eggs. Drain the amarena cherries and catch the syrup. Chop the cherries coarsely. Split the vanilla pod and scrape the marrow. Whip the cream with the vanilla until fluffy and refrigerate. Beat the egg yolks with the sugar in a bain-marie until frothy. Beat the egg whites with a pinch of salt until stiff.

Fold the yolk mixture gently into the cream. Gently fold in the cream vanilla mixture. Pour the mixture into a cake or pudding mold coated with cling film. Spread 2/3 of the cherries with about 4 tablespoons of the syrup over it. Stir the cherries briefly with a fork through the cream mixture to form a marbled effect. Cover with cling film and place it at least 8 hours in the freezer.

Take the semifreddo out of the refrigerator 15 minutes before serving. Take it out of the mold and remove the cling film. Cut it in slices and serve. Garnish with the remaining syrup, the remaining cherries and amaretti.
