160 g Mesclun
150 g + 10 Raspberries or any other fruit to your liking
1 tsp Sugar
60 g Pecans
8 slices Bacon
2 tbsp White wine vinegar
4 tbsp Olive oil

A salad that doesn’t make you feel like you’re eating salad. A little trickster salad. 😉 You know the kind. More of the good stuff than lettuce. More layers, textures, flavors, bacon, fruit, and nuts. The best kind of salads…

Wash the mesclun in cold water and let it drain. Wash the raspberries carefully and let them dry.

Proceed by melting the sugar in a pan and add the pecan nuts. Stir frequently and let them caramelize for 5 min.

Bake the slices of bacon on a hot grill pan on both sides until golden brown. Let them rest on a piece of kitchen paper.

Mash up 10 raspberries in a bowl. Add the white wine vinegar and the olive oil and mix well. Sift through a sieve and season with salt and pepper.

Divide the mesclun, fruit, bacon and pecan nuts over several plates. Drizzle some of the raspberry vinaigrette over the salad and serve.
