4 sheets Puff pastry
Today we have some pleasing snacks on the menu: puff pastry filled with cloudberries! Windmills in puff pastry are very fun to make. And we’ve used cloudberries. Despite great demand as a delicacy (particularly in Sweden, Norway and Finland) the cloudberry is not widely cultivated and is primarily a wild plant. The ripe fruits are golden-yellow, soft and juicy. They are often made into jams, juices, tarts, and liqueurs. In this recipe we use them as a filling for the puff pastry! If you can’t find any cloudberry jam, you can switch it with cranberries.
These windmills are not hard to make and are also done quickly. Serve them with tea or with a bowl of ice cream for dessert, they will definitely be in demand! By making them bigger, you can also use them for breakfast!
Cut each sheet of puff pastry into 4 squares. With a teaspoon, add a little cloudberry jam in the middle of each square.
With a sharp blade cut from the points towards the center, do not cut through!
Fold the 4 corners in and around and pinch the tips above the center.
Brush the puff pastry with the beaten egg and sprinkle some sugar over it.
Bake the windmills in 12-14 minutes at 225°C.
