75 g Rye flour
250 g Wheat flour
Oregano
Olive oil
2 dl Lukewarm water
Salt
2 tbsp Instant dried yeast
For the topping:
4 slices Smoked ham
150 g Hard cheese
125 g Mozzarella
Basil
50 g Rucola
Thyme
Oregano
125 g Sour cream
Olive oil
Pepper
1 Red onion(s)

Preheat the oven with the temperature as high as 250°C or as high as you can heat it.

Put the wheat flour with the rye flour in the bowl of a kitchen machine. Sprinkle a pinch of salt on one side and on the other side the dry yeast. Make sure the yeast and salt do not touch each other.

Add a little lukewarm water and turn on the kitchen machine. Let it rotate and pour the water a little at a time. You may not need all the water indicated in the recipe.

Add a tablespoon of olive oil and season with oregano. Let the kitchen machine rotate at low speed for a long time until you have an elastic dough.

Put the dough in a bowl and cover with cling film. Let it rise for 2 hours in a warm place where there is no draft.

Spice the sour cream with pepper, salt, thyme and oregano. Peel and halve the onion. Cut him in half rings.

Rinse the rucola. Take the basil leaves. Mix the rucola and the basil. Sprinkle some of the olive oil and balsamic vinegar over the salad.

Pull the mozzarella into pieces. Rasp the hard cheese (parmesan or any other hard cheese). Pull the ham into smaller pieces. Cut the cherry tomatoes in half.

On a floured work space knead the dough one more time and roll it out with a rolling pin. Divide the dough into two or four portions (for two large or four smaller pizzas). Place the bottom on a pizza pan in the oven. Let the bottom bake for 1-2 minutes in the hot oven. This way there is already some air in the dough.

Divide the sour cream over the bottom. Sprinkle with grated cheese and add pieces of mozzarella. Continue with the red onion and cherry tomatoes. Season with oregano and sprinkle with olive oil. You can finish it with an egg in the middle if you like.

Let the pizza bake in the oven for about 10-15 minutes. Finish the pizza with the basil-rucola salad and pieces of smoked ham.
