250 g Mixed nuts
200 g Oat flakes
275 g Dried fruitraisins, dried apricot, goji berries, mango, coconut or any kind of dried fruit you prefer
1 tbsp Cane sugar
A typical nordic breakfast contains granola, yogurt, buttermilk and porridge. And a cup of coffee. 🙂 Anyone who makes granola can thus mix the flavours and colors to everybody’s appetite. The following recipe is a good way to start your day. It’s very easy to do. It’s a quick and healthy breakfast or snack. You can use any kind of seeds and nuts you like or have around the house. Traditionally you should eat it with skyr – an Icelandic dairy product. It is like strained yogurt, but any yogurt will do. Fresh berries like raspberries or blue berries will make a nice topping.
Preheat the oven to 180°C. Chop the nuts en mix them with the oat flakes. Spread the mixture evenly on a baking tray and put it in the oven for 15-18 min. Stir it frequently. Take the tray out of the oven and add the chopped dried fruit and sugar. Let it cool off and keep it in an airtight jar or box – it will keep for a long time. Enjoy!
