180 g Plain flour
1 1/2 tsp Baking powder
1 tsp Cardamom freshly ground
Salt
100 g Butter
200 g Granulated sugar
1 Egg
1/4 tsp Vanilla powder
120 ml Milk
2-3 Apple(s) peeled and cored
1 1/2 tbsp Granulated sugar
1 tsp Cinnamon

This cake is simple to make and ideal as a base to create a lot of variations. Instead of apples you could use rhubarb, berries or other fruit. Just remember to take the butter, milk and the egg out of the fridge at least a half hour before using them.

Preheat the oven to 175°C. Grease a springform (22-25 cm diameter).

Mix flour, baking powder, cardamom and salt in a bowl. Set aside.

In a large bowl, beat butter and sugar until light and creamy, about 4 minutes. Add the egg and vanilla and beat until smooth.

Fold in the flour mixture and the milk in additions, and stir with a spatula until combined. Pour the batter in the prepared pan.

Cut the apples in slices and spread them out over the dough.

Combine the sugar and cinnamon and sprinkle it over the apples.

Bake the cake for 10 minutes, then lower the heat to 150°C and bake for an additional 40-50 minutes or until the cake is golden brown and a cake tester comes out clean.
