I can add them to my favorite list, these creamy lemon bars. They almost look like a lemon brownie. The lemon bar has a firm chewy biscuit base, with a soft pudding-like lemon layer on top. Very sweet and sour at the same time. Adding the whipped cream makes them just a bit creamier and a little softer on the lemon taste. If you actually like that extra acidity, you can simply leave out the whipped cream.

Preheat the oven to 180°C. Take a baking tray of about 15 by 30 cm. Grease and line with baking paper.

For the bottom: take a bowl and mix the butter, 100 grams of sugar and a teaspoon of vanilla powder into a creamy whole. Add 150 grams of flour and a good pinch of salt while you continue to mix. You will notice that the longer you keep mixing, more and more dough will stick together. Then make a ball of dough and distribute it evenly over the bottom of the baking tray. Put in the preheated oven for 20 minutes.

Meanwhile, make the filling: grate the peel of the lemons and squeeze out the juice and set aside. Take a new bowl and mix in the eggs and 200 grams of sugar until the mixture thickens. Then add 25 grams of flour, 125 milliliters of whipped cream, 75 milliliters of lemon juice and the zest of the two lemons. Mix the whole briefly and pour on the bottom when it comes out of the oven. Put the whole thing back in the oven for another 20 – 25 minutes. Check after 15 – 20 minutes. If it starts to get light to golden brown, cover with some aluminum foil so that the top does not get too dark.

Let them cool and then cut it into pieces. Serve with some powder sugar!
