Ingredients

For the cake:
25 g Sugar
120 g Honey
75 g Butter at room temperature
40 g Coconut powder
3 tbsp Coffee
60 ml Coconut milk
175 g Plain flour
1/2 tsp Bicarbonate
2 tsp Baking powder
2 Eggs
For the mocha frosting;
120 g Butter at room temperature
200 g Icing sugar
3 tbsp Coffee
1/2 tsp Vanilla extract
Coconut powder for decoration
Coconut flakes for decoration

Preheat the oven to 180°C.

Mix the sugar, honey, butter and coconut powder in a cooking pot and let it melt on medium heat. Keep stirring the mixture.

Add the coffee and the coconut milk and take the pot away from the heat and let it cool.

Add the dry ingredients and the eggs. Stir well together into a homogeneous mixture.

Line a baking form (22 cm) and pour in the dough.

Put it in the oven and bake for 25 min on 180°C.

Take it out of the oven and let it cool.

Now make the mocha frosting. Mix all the ingredients together and whip it until it becomes light and airy.

Divide the frosting over the cake and finish it with the coconut flakes and coconut powder.
