75 g Powder sugar
Salt
1 Lime
75 g + 1 tbsp Plain flour
2 tbsp Butter
100 g Dark chocolate
125 ml Milk
2 Egg yolks
50 g Caster sugar
250 ml Whipping cream
250 g + 4 Strawberries

Preheat the oven to 200°C. Beat the eggs with the powdered sugar and a pinch of salt white and frothy in about 10 minutes. Wash the lime with hot water, rub it dry and grate the peel. Keep a slice of lemon peel separately.

Sift 75 g flour above the egg mixture and gently fold into the mixture. Add the melted butter and the lemon peel. Spoon the batter into a baking tray lined with baking paper (approx. 20×30 cm) and cook until brown for about 20 minutes.

Chop the chocolate. Heat the milk in a pan. Mix the egg yolks with 50 g of sugar and stir 1 tbsp of flour through it. Add the warm milk to the yolk mixture and pour back into the pan. Heat again and keep stirring until the mixture becomes thicker. Take it from the fire and melt the chopped chocolate in the mixture. Stir until it becomes a smooth mass and allow to cool.

Beat the whipped cream and sprinkle the chocolate mixture through it. Spoon the mousse into the spray bag and leave for about 2 hours in the refrigerator.

Wash the strawberries and cut off the crowns. Cut 250g strawberries into pieces. Spray some of the chocolate mousse into 4 glasses. Use a 5th glass of the same size and cut circles from the dough. Sprinkle the biscuit circles with some lime juice.

Divide some strawberries over the mousse and put a biscuit circle on top. Repeat with mousse, strawberries, biscuit, mousse and whole strawberries on top. Garnish with the separate lemon peel.
