250 g Dry biscuits
150 g Butter
2 Lime(s)
1 Vanilla pod
500 g Cream cheese
200 g Caster sugar
5 Eggs
300 g Sour cream
400 g Grapes
100 g Pine nuts

Grind the dry biscuits fine. Melt the butter and mix it with the biscuits crumbs. Divide the mixture over the bottom of a lightly greased spring form. Press it tightly together. Leave it in the fridge for 30 min.

Wash the limes with hot water and rub them dry. Grate the limes. Split the vanilla pod and scrape the vanilla seeds out. Beat the cream cheese, sugar, lime peel and the vanilla seeds for 5 minutes. Preheat the oven to 180°C.

Continue beating the mixture and add the eggs, one at a time. Make sure they’re completely absorbed before adding the next egg. Add the sour cream and season it with some lemon juice.

Pack the outside of the spring form in two layers of aluminum foil. This prevents the mixture from running out. Pour the cream cheese mixture in the spring form and put it in a roasting pan half filled with water. Bake the cheesecake for 60 minutes or until the center of the cake is no longer fluid.

Take it out of the oven and remove the aluminum foil. Let it cool completely in the fridge.

Preheat the oven to 200°C. Wash the grapes and let them dry. Spread them out on a baking tray and roast the grapes for 20 min in the oven. Roast the pine nuts in a dry pan at medium heat.

Let the grapes and pine nuts cool and divide over the cheesecake. Cut the cheesecake and serve!
