250 g Butter
200 g Muscavado sugar
250 g Plain flour
150 g Oat flakes
2 tsp Gingerbread spices
For the filling:
300 g Cream cheese
100 g Powder sugar
2 Large eggs
2-3 Apple(s)
For the salted caramel:
200 g Crystal sugar
100 ml Cold water
90 g Butter
125 ml Double cream
1/2 tsp Salt

This apple crumble cheese cake with salted caramel sauce is exactly why autumn is a great season. What a good way to use the last apples; together with cinnamon, cream cheese and a crumble on top. This combination is really worth the effort to make your own caramel. The oat flakes in the crumb dough make it crunchy and the salted caramel makes it really irresistible.

Cover the bottom of a cake mold (24 cm diameter) with baking paper and heat the oven at 180°C.

Take a bowl and mix the butter with the brown sugar in. Take another bowl and mix the flour, spices, oatmeal and salt. Add this dry mixture to the butter/sugar mix and mix until a coarse crumble has formed. Divide the crumble into two parts. Press one half on the bottom of the coated mold and bake in the preheated oven for 15 minutes. Place the other half of the crumble aside.

Cut the apples into cubes and mix with some cinnamon. Place the apples aside.

Mix the cream cheese gently in a bowl and mix in the powdered sugar. Then fold two eggs through the soft cream cheese. If this is well mixed, you can pour it on the bottom of the cake. Then divide the apple cubes over the cream cheese and cover it with a nice layer of crumble.

Place the cake for 45 minutes in the still preheated oven. Meanwhile you can prepare the salted caramel sauce.

This basic recipe for salted caramel is ideal because you only need five ingredients. The most important thing to keep in mind when making salted caramel is that you do not heat the pan too much.

Put a sauce pan with sugar and water on the fire and heat on a low fire. The sugar must be completely covered by water. Allow the mixture to heat until it starts to melt and gradually change color. Do not stir during this process. The caramel must have a beautiful full brown color. Take care not to let it get to dark.

When you have reached the correct brown color, add the butter as soon as possible. The mixture will now bubble. Keep stirring for about 1-2 minutes until the butter is completely dissolved.

Gently add the whipping cream. Keep stirring for a minute until it is thoroughly mixed. You can turn the fire off. Remove the caramel from the fire and add the salt to taste. Let your salted caramel cool down before using it.

Once the cake is done let it cool in the fridge for at least two hours. Cut the apple crumble cheese cake in about 12 pieces and pour a nice layer of salted caramel sauce on top. If the sauce has become too hard, you can put it in the microwave to soften it or heat it au bain marie.
