At the time I write this story, I know what cardamom is and what it tastes like, but until recently I knew little off it. I cannot remember my mother using it often in her kitchen. It hadn’t earned a place among the other spices in the kitchen cabinet. That’s a pity, because it’s worth to know.
On our site you will often find the spice in our recipes. It is after all widely used in the Swedish cuisine. But what’s so special about it?
We must go back to the time of the ancient Egyptians to learn that they already used cardamom in their dishes. The Egyptians even cleansed their teeth with it. The Romans and the Vikings used it as well. The Vikings brought the cardamom to Scandinavia, where it is often used in the preparation of bread. But originally it is from India and neighbouring countries. In Asian countries it is used as a medicine because it is very healthy and it is said it would help against digestive problems.
There are different types of cardamom, each with their own specific flavour: the white, the black and the green cardamom. When in the Western culinary world people talk about cardamom, they are usually referring to the green one.
Cardamom is a spice which is relative to ginger. It’s an important ingredient in sweet dishes. On the other hand it is one of the most expensive spices in the world. Fortunately the taste of cardamom is pretty strong and a small number of pods is usually enough to flavour a dish. That’s a relief because cardamom has such a sweet, aromatic flavour it would be a pity not to use it. It has a typical unique and fresh perfume and tastes like lemon and mint. Some people use it in their coffee or tea. We used it to flavour warm white chocolate milk. You should definitely try this one!
